Pumpkin Oat Cookies with Gnash Centre

Ingredients

Biscuits:
3/4 cup all purpose flour
1/2 tsp baking soda
3/4 coconut sugar
1 egg yolk (or replace with one tsp of ground flax seed soaked in 1tbs water)
1/2 cup pumpkin puree
1/4 tsp salt
1 tsp vanilla
1 cup rolled oats
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp ground ginger
150g melted butter

Gnash
Bennetto 100g Original Dark chocolate
1 tbsp butter of choice
50g cream

Method:
  1. In a large bowl sift together flour and baking soda
  2. Add remaining ingredients
  3. Roll into small balls and flatten with a fork
  4. Fan bake for 15 mins at 170 degrees. While cooking, prepare gnash
  5. Melt over double boiler
  6. Add in softened butter of choice and cream
  7. Stir and place in fridge until thickens but still workable and holds its shape
  8. After allowing biscuits to cool, pipe gnash in between two biscuits
